You Will Need: 4 tbsp. Concord Foods lemon juice or fresh squeezed juice; 1 stick of butter; 2 eggs (lightly beaten); 1/3 cup water. Directions: Makes 12 servings. 1. Preheat oven to 350 degrees F. Grease flour 8" x 4" loaf pan. 2. In a mixing bowl, mix water, lemon juice, melted butter, slightly beaten eggs and loaf mix for 1-2 minutes or until all ingredients are wet. 3. Pour batter into loaf pan. 4. Bake for 55 minutes or until toothpick inserted into center comes out clean. 5. Allow cake to cool completely before removing from pan. Cut loaf with serrated knife. For best results, let loaf cool overnight. Lemon Glaze: Optional. Whisk together 1/2 cup confectioners sugar and 1 tbsp. lemon juice (plus more if needed) to make a thick but pourable glaze. With a spoon, drizzle over the top of cake, letting the glaze drip down the sides. Allow glaze to set before serving. High Altitude Baking (Over 3,500 Feet): Add 2 tsp. of flour and 2 tsp. of water into the mix. Prepare as directed. Serving Suggestions: Add blueberries or poppy seeds. For a dense consistency, add 1/2 cup sour cream to mix & omit 1/3 cup water.
