Corn Read Or Corn Muffins: 1 1/2 cups Self-Rising Corn Meal. 1/2 Self-rising Flour. 1/2 Cup Sugar. 1/4 cup Cooking Oil or Shortening. 1 cup buttermilk. 2 eggs. Corn Bread: Preheat oven to 350 degrees. Grease 10 inches skillet with half of oil and warm on top of stove on medium heat. Combine the rest of the oil and all ingredients above. Blend until smooth. Pour into warmed skillet and bake 20 to 30 minutes, or until brown on top. Serve warm with butter. Corn Muffin: Preheat oven to 350 degrees. Combine all ingredients and spoon into well greased muffin pan. Bake for approximately 25 minutes. Top With butter if desired and serve warm. Corn Meal Cakes: 1 cup self-rising corn meal. 1/4 cup self-rising flour. 1/2 teaspoon baking soda. 2 teaspoons sugar. 1 beaten egg. 1 1/2 cups buttermilk. 1 tablespoon shortening. Sift dry ingredients together. Add well beaten egg and buttermilk. Batter should be consistency of cream. Cook on a well greased hot griddle or frying pan, turning cakes when batter begins to bubble. Serve hot with butter or syrup. Spoon Bread: 1 cup self-rising corn meal. 3 tablespoons melted shortening. 1 tablespoon sugar. 3 eggs. 2 cups milk. 1 cup cold water. Preheat oven to 400 degrees. Scald milk and pour over Corn meal. Add cold water. Add sugar and melted shortening. Separate eggs and beat yolks well. Add well beaten yolks. Stiffly beat egg whites and fold into mixture just before baking. Pour into well greased hot baking dish (about 1 quart). Bake 40 minutes. To open twist top and lift the wire ring off.
