Corn Meal Muffins or Corn Sticks: 2-1/4 cups corn meal. 2 eggs. 2 cups Buttermilk. 3 tablespoons melted Shortening. 12 teaspoons sifted baking powder. 1 teaspoon baking soda. 12 teaspoons salt beat eggs together, buttermilk, shortening, and salt. Add corn meal and stir add Dissolve in until baking soda tablespoon cold water and add to cornmeal mixture. Add sifted baking powder mix thoroughly and pour into hot well greased muffin pans. Bake for 15 to 20 minutes in 450 degree oven. Hushpuppies: 2 cups corn meal. 1/4 cup self rising flour. 1/2 Teaspoon baking soda. 1 Teaspoon baking powder. 1 teaspoon salt s cup sugar. 1 Beaten egg. 1 Cup buttermilk. 3 tablespoons chopped onions (optional). Preheat 4 to 5 inches of oil to 350 degrees. Mix all dry Ingredients together. Add onion (if using), buttermilk, and then the beaten egg. Drop spoonfuls into the hot oil. Fry until golden brown. Hush puppies should float when done. Batter Bread: 1-1/2 Cups corn meal. 1-1/2 Teaspoon salt. 1-1/2 Heaping teaspoons baking powder. 2 Eggs. 1 Cup buttermilk. 3 cups boiling water. Preheat oven to 450 degrees. Place 1-1/2 tablespoons of shortening in an 8X8 dish and place in oven to melt shortening and get pan hot. Sift together dry ingredients. Beat eggs, add buttermilk, and mix well. Mix dry ingredients into egg and butter milk mixture. Add boiling water and beat thoroughly. Pour mixture into hot dish and bake until very browm, about 25 to 30 minutes. Spoon Bread: 1 cups corn meal. 12 Cups boiling water. 1 Egg. 1 Cup buttermilk. 1 teaspoon baking soda. 3/4 Teaspoon salt. 1/2 Cup milk (optional). Pour boiling water over corn meal and let cool. Beat in egg, buttermilk, baking soda and salt. Pour batter into hot greased, 7 inch baking dish. Bake at 400 degrees for 35 to 40 minutes. Add a tea tablespoons of milk from time to time if you wish to keep the bread soft, using up to 1/2 cup milk. Bake 5 to 10 minutes longer if adding milk. Stone ground. Unbolted. To open, twist top and lift the wire ring off.
