Corn Meal Muffins And Corn Sticks: 2 Eggs, 2 1/4 cups Corn Meal, 2 cups Buttermilk, 3 tablespoons Melted Shortening, 3 teaspoons Baking Powder, 2 teaspoons Salt, 1 teaspoon Soda. Beat eggs, together, add milk, shortening, salt. Add meal and milk until smooth. Add soda, dissolved in one tablespoon cold water. Sift in baking powder, mix thoroughly and pour into hot, well greased muffin pans. Bake in hot oven (450 degrees) 15 or 20 minutes. Hush Puppies: 2 cups Corn Meal, 1/4 cup self–rising flour, ½ teaspoon soda, 1 teaspoon baking powder, 1 teaspoon salt, 1/8 cup sugar, 1 whole egg, 3 tablespoons chopped onions (optional), 1 cup buttermilk. Mix all dry ingredients together. Add onion, the milk and last the beaten egg. Drop by the spoon full into the pan or kettle in which fish is being fried. Fry to a golden brown. If a deep pot is used the hush puppy bread will float when done. Batter Bread: Set oven at 450 degrees f. And place a pan 8x8x2 in oven with 1 ½ tablespoons of grease 2 eggs, 1 1/2 cups corn meal, 11/2 teaspoons salt, 1 cup buttermilk, 1 1/2 teaspoons baking powder (heaping), 3 cups boiling water. Beat eggs, add milk and mix well. Sift into this, meal, salt, and baking powder. Add boiling water and beat thoroughly. Pour mixture into hot pan and bake at 450 degrees f. Until very brown -which is from 20 to 30 minutes. Spoon Bread: 1 1/2 Cups Boiling Water, 1 cup Corn Meal, 1 Egg, 1teaspoon Shortening, 1 cup Sour or Buttermilk, 1 teaspoon Baking Soda, 3/4 teaspoon salt. Pour boiling water over corn meal and let cool. Beat in egg, milk, soda and salt. Pour batter into hot greased, 7- inch baking dish. Bake in moderate oven for 15 to 40 minutes. Add a few tablespoons milk from time to time if you wish to keep bread soft, using in all 1/2 cup sour or Sweet milk. This will call for longer baking about 45 minutes in all.
