Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils, and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Cooking Instructions: Preparation: (1) To cook as a roast, remove loin from bag and pat dry with a paper towel. (2) To cook as chops, remove loin from bag and place fat side up on a cutting board. Using a sharp knife, cut perpendicular to the loin. Be sure to cut chops that are consistent In thickness to ensure even cooking. Pat chops dry with a paper towel. Roast: (1) Preheat oven to 350 degrees F. (2) Lightly coat roast with olive oil and season as desired. (3) Place roast in an oven safe dish and cover loosely with foil. (4) Place roast in oven and cook for approximately 20 minutes per pound or until internal temperature on a meat thermometer reaches 145 degrees F in the thickest part of the roast. (5) Remove from oven and allow to rest for at least 3 minutes. Chops: (1) Preheat grill to medium- high (450 degrees F). (2) Lightly coat chops with olive oil and season as desired. (3) Place chops on grill and cook approximately 8 to 9 minutes for 3/4 inch chops or 12 to 16 minutes for 1 1/2 inch chops or until internal temperature on a meat thermometer reaches 145 degrees F in the thickest part of the chop, turn once halfway through cooking. (5) Remove from grill and allow to rest for at least 3 minutes. Stovetop Instructions: To cook on stovetop, follow directions above except use a preheated heavy skillet over medium-high. Great for roasting. Keep refrigerated.
