Stir together biscuit mix and cheddar cheese. Add the buttermilk, stir using as few strokes as possible, just until completely combined. Pour about 1/4 cup of batter onto preheated, lightly greased or non-stick griddle or skillet. Cook 1 to 1-1/2 minutes on each side or until bubbles on surface begin to pop. Turn only one time or pancakes will be tough. Simple Cobbler: 1/4 cup butter; 1 cup Southern Biscuit Complete Biscuit Mix; 3/4 cup sugar; 3/4 cup milk; 1 can pie filling. Preheat oven to 350 degrees F. In a 1-1/2 quart baking dish, melt butter. In a small mixing bowl, combine biscuit mix and sugar. Add milk to the biscuit mix and sugar mixture and stir until completely mixed. Pour mixture over butter. Do not mix. Add pie filling evenly over the top. Do not mix. Bake for 25 minutes or until the center springs back.
