Get your spoons ready for a layered treat that is sure to make your holiday even sweeter. With a crunchy layer of graham crackers as your base, a fluffy cream cheese filling and cinnamon apples on top, it’s no wonder these parfaits remind you of a decadent cheesecake dessert. And not only are they sweet, but they also save you some sweet time. After all, there’s no baking required!
For Apple Topping
Melt the butter over medium heat in a large saute pan. Add the apples, stirring frequently, and cook for 3-4 minutes until tender.
- Whisk together the cornstarch and water until dissolved and pour over the apples. Add the brown sugar, cinnamon and nutmeg. Bring to a boil and allow to cook for 2-3 minutes until thickened. Remove from the heat and allow to cool.
Mix together the graham cracker crumbs, melted butter and salt in a small bowl. Evenly divide the mixture between six serving jars or glasses.
Beat together the cream cheese and powdered sugar until smooth and creamy. Add the vanilla and mix to combine.
- Whisk the heavy cream in a medium bowl until medium peaks form (just stiff enough for the whipped cream to stand up firmly with a slight curl at the tip). Gently fold half of the mixture into the cream cheese. Fold the remaining whipped cream in until just combined.
- Evenly divide the cheesecake filling over graham cracker crusts. Top with the cooled apples and serve immediately.
