This savory breakfast casserole is a perfect kitchen hack! It delivers all the flavors of brunch without using every burner on the stove or ending up with a sink full of dishes. Eggs, three kinds of cheese, bacon and spinach are all baked together — with cubes of sandwich bread to absorb the liquid — creating a decadent, savory bread pudding-like texture. The casserole also makes great leftovers, which can be enjoyed as a quick breakfast all week long!

  1. Preheat the oven to 350°F and grease a 9x13 inch baking dish with non-stick cooking spray. Place the spinach in a clean kitchen towel and squeeze out any excess moisture.
  2. Whisk the spinach, half-and-half, cheddar, mozzarella, cream cheese, eggs, mustard and salt together in a large bowl until combined. Fold in the bread and bacon until just combined.
  3. Pour the egg mixture into the prepared dish and bake until the top is light golden brown and the center is set, about 45-55 minutes. Let cool for 15 minutes before slicing. Top with the parsley and serve.

Recipe Tip: Feel free to substitute Monterey Jack, Gruyere or Parmesan for the cheddar and mozzarella cheese!
