Corn Flake-Crusted Chocolate Ice Cream Cake

Ice cream cake might seem like the kind of thing that’s impossible to make at home, but it’s actually an achievable DIY! In place of a baked cake, use crushed corn flakes mixed with brown sugar, cinnamon and melted butter to create the base and the topping. Then, all it takes is spreading softened ice cream (feel free to swap in your favorite flavor) in a baking dish and freezing. Serve with sundae fixings for an epic treat!


Select ingredients:


  1. Mix together the corn flakes, sugar, cinnamon and salt in a medium bowl.
  2. Melt the butter in a large skillet over medium heat. Add the corn flakes mixture and stir constantly for 4-5 minutes until lightly browned.
  3. Press half of the corn flakes mixture evenly into the bottom of a 9x13 inch baking dish.
  4. Spread the softened chocolate ice cream over the corn flakes layer. Press the remaining corn flakes mixture onto the top of the ice cream.
  5. Cover and freeze for at least 4 hours or until set.
  6. When ready to serve, cut into squares, drizzle with the chocolate syrup, and top with dollops of whipped cream and maraschino cherries.

Recipe Tip: For extra flavor and texture, mix sweetened coconut and chopped nuts into the corn flakes mixture!
