Grilled Buffalo Chicken Skewers

These colorful skewers have all the bold flavor of classic chicken wings — but are much healthier for you! That’s thanks to smart ingredient choices (high-protein boneless skinless chicken breasts and fresh vegetables) and the cooking method (grilling instead of frying). A hot sauce marinade brings plenty of Buffalo-style tangy spiciness; try the same combo on grilled chicken legs or thighs, if you prefer!

- Preheat the grill to medium-high heat. Soak wooden skewers in water for at least 30 minutes.
- Alternate placing the chicken, onion and peppers onto each skewer.
- Melt the butter in a medium saucepan over medium heat. Add the garlic and saute for 1 minute, stirring frequently. Add the hot sauce and black pepper, and whisk to combine. Remove from the heat.
- Place the chicken skewers on the grill and baste with the Buffalo sauce. Grill for 6-8 minutes. Rotate the skewers and baste with the sauce. Grill for another 6-8 minutes, or until the chicken reaches an internal temperature of 165°F.
Recipe Tip: To cook in the oven, heat the broiler to high and line a baking sheet with aluminum foil. Broil 12-15 minutes, rotating and basting skewers every 5 minutes, until the chicken is cooked through.
