Grilled Buffalo Chicken Skewers

These colorful skewers have all the bold flavor of classic chicken wings — but are much healthier for you! That’s thanks to smart ingredient choices (high-protein boneless skinless chicken breasts and fresh vegetables) and the cooking method (grilling instead of frying). A hot sauce marinade brings plenty of Buffalo-style tangy spiciness; try the same combo on grilled chicken legs or thighs, if you prefer!


Select ingredients:


  1. Preheat the grill to medium-high heat. Soak wooden skewers in water for at least 30 minutes.
  2. Alternate placing the chicken, onion and peppers onto each skewer.
  3. Melt the butter in a medium saucepan over medium heat. Add the garlic and saute for 1 minute, stirring frequently. Add the hot sauce and black pepper, and whisk to combine. Remove from the heat.
  4. Place the chicken skewers on the grill and baste with the Buffalo sauce. Grill for 6-8 minutes. Rotate the skewers and baste with the sauce. Grill for another 6-8 minutes, or until the chicken reaches an internal temperature of 165°F.

Recipe Tip: To cook in the oven, heat the broiler to high and line a baking sheet with aluminum foil. Broil 12-15 minutes, rotating and basting skewers every 5 minutes, until the chicken is cooked through.
