Grilled Shrimp Salad

Zingy, zippy, zesty! These are just a few words you could use to describe this dish. The secret is really in the dressing, which puts the clean herbaceousness of cilantro and bright acidity of lime juice to good use. When combined with grilled shrimp, some fresh veggies and sliced, grilled baguette, this summer salad sings with flavor!


Select ingredients:


  1. Add the cilantro, olive oil, lime juice, honey, garlic, salt and pepper to a food processor or blender and process until smooth.
  2. Place the shrimp in a large zip-close bag. Whisk together 1 1/2 tablespoons olive oil, lemon juice, honey, garlic and salt in a small bowl. Add the marinade to the bag and turn to evenly coat the shrimp. Refrigerate for at least 30 minutes or overnight.
  3. Preheat the grill to medium heat. Remove the shrimp from the marinade. Discard the marinade. Thread the shrimp onto the skewers and grill for 2-3 minutes on each side, or until the shrimp is firm and opaque.
  4. Meanwhile, slice the baguette in half lengthwise and brush with the remaining olive oil.
  5. Place on the grill and cook for 2-3 minutes on each side until lightly golden brown. Remove from the grill and cut into cubes.
  6. Add the spinach, onion, cucumber and baguette to a serving bowl. Remove the shrimp from the skewers and add to the bowl.
  7. Pour the vinaigrette over the salad and toss to combine. Serve immediately.

Recipe Tip: For a creamy vinaigrette, add 1/4 cup Greek yogurt or half an avocado to the food processor.
