When peach season arrives, we can’t wait to use these fuzzy stone fruits as much as possible! Instead of a traditional peach pie, try these little hand pies that are portable, snackable and affordable. The peaches’ natural sweetness is enhanced with just a touch of cinnamon and sugar, and then tucked into rounds of prepared pie crust for a beautiful, handmade dessert that comes together in under an hour.
Ingredients
Directions
- Dice the peaches into 1/2-inch pieces. Bring the peaches, both sugars, cinnamon and salt to a boil over medium heat. Cook for 10-12 minutes, or until peaches and syrup are thickened. Remove from heat and allow to cool for 1 hour.
- Preheat the oven to 425°F.
- Unroll the pie crusts and using a 4-inch round cutter, cut 6 circles from each pie crust. Transfer the pie crust circles to a baking sheet. Divide the peach filling evenly between each pie crust, placing it in the center of each round.
- Fold each pie crust in half and crimp the edges.
- Whisk together the egg and water. Brush each hand pie with the egg wash.
- Bake for 15-20 minutes, or until hand pies are golden brown.
Recipe Tip: Peach hand pies can be made up to 3 days in advance. Prepare and refrigerate the unbaked hand pies. Alternatively, place them in the freezer and bake them from frozen when ready to serve, adding 2 minutes to baking time.
