This simple and satisfying green bean and tomato dish is an affordable side sure to become your family’s new weeknight favorite. It pairs well with all kinds of entrées like grilled chicken, baked salmon, mac and cheese and so much more. Add a sprinkle of crushed red pepper flakes for a hint of heat; or, for an extra pop of flavor, add fresh herbs like parsley, oregano or thyme.
- Bring a large pot of water to a boil. Add the green beans and cook for 3-4 minutes. Drain and rinse with cold water. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the green beans, garlic, onion powder, salt and pepper. Sauté for 2 minutes. Add the tomatoes and sauté for 1-2 minutes or until softened.
- Transfer the green bean mixture to a serving bowl and sprinkle with cheese.
