Savor the delicious flavor of s’mores without the campfire! Borrow this irresistible flavor trio — chocolate, marshmallows and graham crackers — for an affordable ice cream cake. The impressive look is easy to accomplish; it just requires layering the ingredients a few at a time and allowing the cake to set. Toasty golden marshmallows (broiled briefly in the oven) are the perfect finishing touch!

  1. Set aside 3 tablespoons of graham cracker crumbs and 3 tablespoons of mini chocolate chips.
  2. Mix the remaining graham cracker crumbs, sugar, salt and butter in a medium bowl. Press the mixture into the bottom and up the sides of a 9-inch springform pan.
  3. Evenly spread the vanilla ice cream over the graham cracker crust. Sprinkle with the remaining chocolate chips and place into the freezer for 15 minutes.
  4. Remove from the freezer and evenly spread the chocolate ice cream over the chocolate chip layer. Return to the freezer for 15 minutes.
  5. Meanwhile, preheat the oven to broil. Line a baking sheet with parchment paper.
  6. Arrange the marshmallows in an even layer on the baking sheet.
  7. Broil until the marshmallows are golden brown, about 30 seconds to 1 minute.
  8. Remove from the oven and transfer the marshmallows to the top of the ice cream cake. Sprinkle with the reserved graham cracker crumbs and mini chocolate chips.
  9. Freeze the ice cream cake for at least 1 hour before serving.

Recipe Tip: For easy cutting, dip your knife in hot water before slicing!
