Need some new inspiration for Taco Tuesday? These steak tacos, kicked up with creamy mashed avocado, are a real crowd pleaser and come together in just half an hour. For an authentic flavor, these are served street taco-style — with just a sprinkling of onion and cilantro as toppings.
Ingredients
Directions
- Place the flank steak in a large zip-close bag. Whisk together the oil, 4 tablespoons of the lime juice, 1/3 cup of the cilantro, garlic, cumin and salt in a small bowl. Add the marinade to the bag and turn to evenly coat the steak. Refrigerate for at least 1 hour.
- Preheat the grill to medium-high heat. Remove the steak from the marinade. Discard the marinade. Grill the steak for 5-8 minutes on each side or until desired doneness.
- Remove the meat from the heat and allow it to rest for 10 minutes, loosely covered with foil, before cutting.
- Mash the avocado in a medium bowl with the remaining lime juice and salt to taste.
- Cut the steak into bite-sized pieces.
- Dress the tortillas with the mashed avocado first, then the steak, onion and remaining chopped cilantro.
Recipe Tip: Do not allow the meat to marinate for more than 8 hours or the acidity from the lime juice will affect its texture.
