Steak & Avocado Tacos

Need some new inspiration for Taco Tuesday? These steak tacos, kicked up with creamy mashed avocado, are a real crowd pleaser and come together in just half an hour. For an authentic flavor, these are served street taco-style — with just a sprinkling of onion and cilantro as toppings.

  1. Place the flank steak in a large zip-close bag. Whisk together the oil, 4 tablespoons of the lime juice, 1/3 cup of the cilantro, garlic, cumin and salt in a small bowl. Add the marinade to the bag and turn to evenly coat the steak. Refrigerate for at least 1 hour.
  2. Preheat the grill to medium-high heat. Remove the steak from the marinade. Discard the marinade. Grill the steak for 5-8 minutes on each side or until desired doneness.
  3. Remove the meat from the heat and allow it to rest for 10 minutes, loosely covered with foil, before cutting.
  4. Mash the avocado in a medium bowl with the remaining lime juice and salt to taste.
  5. Cut the steak into bite-sized pieces.
  6. Dress the tortillas with the mashed avocado first, then the steak, onion and remaining chopped cilantro.

Recipe Tip: Do not allow the meat to marinate for more than 8 hours or the acidity from the lime juice will affect its texture.
